SOY MUFFINS

A muffin that manages to be both nourishing and delicious. It can also be made in 1-2-3 fashion: (1) Assemble dry ingredients. (2) Assemble liquid ingredients. (3) Combine dry and liquid ingredients.

PREPARATION TIME 15 MINUTESMAKES 12 MUFFINS

BAKING TIME 12 MINUTES

Preheat oven to 425°.

½ cup sifted soy flour

1 cup whole wheat flour

¼ cup unbleached, all-purpose flour

¼ cup wheat germ

1 tablespoon baking powder

1 teaspoon salt

¼ cup sunflower seeds

½ cup raisins

Combine thoroughly, using an electric mixer if possible.

1 largeegg

3 tablespoons oil

2 tablespoons honey

1 cup low-fat milk

Beat the egg with the oil, honey, and milk. Stir this mixture into the dry ingredients only enough to moisten them. Spoon into oiled muffin tins. Bake for 12 minutes. Cool muffins on a rack.
